Salicylate Treatment Affects Fruit Quality and Also Alters the Composition of Metabolites in Strawberries

This study evaluated the effect of preharvest treatments with salicylates (salicylic acid (SA), methyl salicylic (MeSA) and acetyl (ASA)) on fruit quality parameters primary secondary metabolites during ripening at five sampling dates. The results showed that affect overall quality, some very desirable important properties strawberry fruits were acquired by treatments, such as a deeper red colour (decreased hue angle), delayed process maintenance higher firmness, sugar ascorbic content. HPLC-MS analysis phenolic contents almost all dates treatment increased content groups, hydroxycinnamic acids (SA: up to 18%; MeSA: 13% increase), flavanols 27%, 36% ASA: 24% anthocyanins 51%, 33% 28% increase) also flavonol glycosides flavones. Total phenolics in increased-up 27% SA MeSA. In general, better metabolite obtained SA.
